四川旅游标准化工作材料

川菜英译汇编

川菜是四川文化中最具特色和招牌的名号之一。川菜的麻辣鲜香口味令众多食客们流连忘返, 其美名早以远播海内外。许多外国友人来到四川都禁不住要美美体验一把这里的麻辣火锅, 麻婆豆腐等。成都的各种美味小吃更是展现出了成都人民爱生活, 爱美食的情趣。要把川菜进一步广泛深入地推向世界, 促进国际间的美食文化交流离不开翻译工作者们对于川菜菜名的翻译。

川菜配料丰富, 调味多变, 菜式多样, 川菜菜名更是别具一格。如何既体现出川菜的用料, 又能吸引国外友人便成了川菜翻译的难题。目前对于川菜的翻译研究不在少数, 也提出了相应的翻译原则和翻译方法, 但多流于民间, 略显零散, 缺乏权威的参考价值。本次收集覆盖较全面, 分类较系统, 除了将川菜按照饮食顺序分成凉菜, 热菜, 汤羹和小吃外, 更将种类最繁杂的热菜按照主料分为了猪肉, 牛肉, 禽蛋, 海鲜等。希望通过这种汇集给喜爱川菜翻译的研究者们提供全面系统的参考;给四川及成都各餐饮服务行业出具较规范的菜名翻译, 以促进其餐饮业的发展;同时也希望借助此次收集将川菜文化进一步推广, 吸引更多的国外游客来四川旅游, 品尝川菜的美味。

本课题按照川菜的种类, 汇集了从凉菜, 到热菜, 汤菜再到小吃的川菜菜名翻译, 并对部分菜名进行了翻译修正, 以求达到更准确合适的翻译, 如有不甚妥帖之处, 欢迎指正。

水煮鱼]

材料:3斤左右的白鲢1条,豆芽,大葱,干辣椒,泡椒,花椒,姜,蒜,鸡精,豆粉,料酒,盐,豆瓣

做法:

1、将鱼杀好洗净,片成鱼片,鱼排剁成块状。

2、将鱼片用少许盐、料酒、生粉拌匀,码味30分钟。

3、锅内倒入少量植物油,将豆芽炒至7成熟,起锅,铺在碗底,备用。

4、用一个小锅,烧一锅水,把码好味的鱼倒入,大火煮1-2分钟起锅。

5、把煮好的鱼轻轻的放在豆芽上面,倒入汤,盖住4/5的鱼即可,在上面撒上适量鸡精。

6、在干净的锅中加平常炒菜三倍的油,油热后,放入适量豆瓣、爆香,加剁碎的泡椒、姜、蒜、花椒粒中小火煸炒,出味后加入干辣椒,加继续翻炒片刻后,加葱节,翻炒几下,倒入铺好鱼的碗中。

[回锅肉]

主料:猪肋条肉(五花肉)400克

辅料:青椒红椒黄椒100克 豆干适量

调料:豆瓣酱25克,甜面酱10克,酱油10克,料酒5克,盐3克,味精2克,植物油20克,大蒜适量

做法:

1.将肥瘦相连的带皮猪肉刮洗干净,放入汤锅内,煮10分钟,至八成熟时捞出晾凉,切成5 厘米长、4 厘米宽、0.2 厘米厚的片;

2.将彩椒择洗干净,斜刀切成形;

3.郫县豆瓣酱剁成蓉。

4.炒锅置中火上,放油烧热,放入姜片蒜片香干爆炒,然后下肉片略炒(炒到那个灯盏窝的状态最好了);

5.倒出多余的油,再加入青椒、郫县豆瓣酱、甜面酱、料酒、精盐、味精、酱油颠翻炒断生即可。

回锅肉的制作要诀:

1.精选肥瘦相连带的猪腿肉,煮肉时以断生、肉熟皮软为度,不宜过烂。

2.炒肉片时要旺火热锅,加少许精盐才能使肉片炒至吐油、四周微卷,呈灯盏窝状。

[鱼香肉丝]

材料:肉、姜、葱、蒜末、冬笋丝、木耳丝、剁椒

做法:

1.肉切丝,切好丝后用酒、盐、淀粉、糖腌制15分钟。用花生油把腌制好的猪肉丝炒散,别炒太熟。

2.猪肉6成熟就可以放剁椒,翻炒一下,然后放姜葱蒜末,最好放笋丝与木耳丝。

3.当再次煮开就马上放酱油、醋、酒、鸡精。

4.最后一定要用淀粉勾芡,这很重要,出来的效果要想油光发亮,就必须做这一步骤。

[ 糖醋排骨]

材料:猪精排,大葱,生姜,白糖,料酒,精盐,保宁醋,植物油,高汤。

做法:

1.将排骨剁成两三公分的小块儿,加大葱、生姜、料酒、精盐码味约30分钟。

2.上笼蒸约20分钟。将锅置于中火并加入植物油待油热后加适量白糖。炒至金黄色为止。

3.加高汤及排骨入锅,放白糖,保宁醋,用文火烧至汤干、汁浓、起丝即可。

4.盛盘,淋上熟油,出锅即可。

[口水鸡]

原料:鸡肉

做法:

1.将鸡肉先用少许盐腌15分钟左右,锅内上冷水,放入整个的鸡腿,鸡胸。注入冷水没过鸡肉表面,加适量的盐、一勺料酒,葱姜煮熟。

2.加盖用大火煮开后,打去上边的浮沫。

3.然后转中火煮5-7分钟,煮好后别揭开盖子 就加盖焖10分钟 利用锅里的蒸汽将鸡肉全部蒸熟 这样最大程度保证了鸡肉的鲜嫩。

4.鸡肉焖好后 捞出 放进冰水里过凉 目的是让鸡肉紧缩 保持入口有弹性。

5.将酱油、姜蒜汁、芝麻酱、花椒油、白糖、醋、味精、红油、麻油于碗中对成汁淋在鸡条上,撒上芝麻、花生末、葱花即成。

[麻婆豆腐]

材料:豆腐500克 肉末150克 蒜苗50克 豆鼓20克 姜末、酱油、盐、辣椒酱、辣椒面、花椒面、水淀粉适量

做法:

1、锅中放油烧至六成热,倒入肉末炒散炒熟后起锅装碗里待用。

2、锅中放油烧至六成热,放辣椒酱、酱油、辣椒粉、豆豉炒红炒香

3、加一碗高汤(水也可),放豆腐、肉末煮5分钟。

4、放入蒜苗,翻炒几下,勾欠

5、起锅撒上花椒面(喜爱香油滴朋友,可放4.5滴香油)

注意:

1.豆腐切块后,用沸腾的淡盐水焯水,可以除豆腥味,并保持豆腐口感细嫩,且不易碎。

2.炒辣酱时,需要温油下锅,用中火炒,辣酱和辣椒面才不会炒糊

[宫保鸡丁]

材料:鸡胸肉 小红椒和辣椒粉 炸花生米 葱粒蒜 姜末 花椒 胡罗卜 青豆

调料:生抽,老抽,糖,醋,鸡粉,香油,盐,淀粉,料酒

做法:

1、把调料调成碗汁,把蒜和葱先泡到汁里出味后取出不要。这样子做的时候不会有这些葱姜蒜末在菜里,影响口感和美观。如果没这些计较的话可以直接煸炒。

2、鸡胸肉切1cm左右的丁,加入盐,料酒和干淀粉抓均匀,腌制5分钟。花生炒熟,胡萝卜红椒切小丁。

3、锅烧热,倒入油放入花椒,待花椒出香味,颜色略变深后把花椒盛出不要了,放入干辣椒粉煸出红油。

4、放入鸡丁炒至散变白后,将胡萝卜粒放入,翻炒几下,倒入调好的碗汁,大火翻炒1分钟后,倒入事先煮熟的青豆粒和炸好的花生米即可。

[干煸四季豆]

材料:四季豆、肉末、黄酒、湿淀粉、辣椒段、姜丝、花椒、蒜粒、老干妈辣酱、料酒、鸡精

做法:

1、四季豆洗净,掐段,沥干水份;肉末加少许盐、黄酒、湿淀粉抓匀

2、锅热放油,下四季豆翻炸一会儿,3、洒少许盐,盖上锅盖焖炸一会儿,再打开盖子,翻炸,直到表皮呈虎皮样盛出

4、另起锅,放少许油,将肉末煸炒至变色出锅

5、锅里留少许油,烧热后,放入辣椒段、姜丝、花椒、蒜粒煸出香味

6、倒入四季豆、肉末少许盐、老干妈辣酱翻炒,最后放少许料酒和鸡精翻炒几下就可以出锅了。

[水煮肉片]

材料:猪里脊肉、蒜苗、芹菜、凤尾。鸡蛋、胡椒、豆瓣酱、姜、大葱、辣椒(红、尖、干)、花椒、料酒、鸡精、盐、淀粉(豌豆)、植物油。

做法:

1.将猪里脊肉切片,鸡蛋清和淀粉、盐、味精、料酒调匀成糊,涂抹在肉片上;

2.蒜苗、芹菜、凤尾洗净切片;

3.将植物油入锅,烧热,倒入花椒、干辣椒慢火炸,待辣椒呈金黄色捞出;

4.然后,将辣椒、花椒切成细末;

5.用锅中油爆炒豆瓣辣酱,然后将白菜叶、葱白、姜、肉汤、酱油、胡椒粉、料酒、味精等调料放入,略搅几下,使之调匀;

6.蒜苗、芹菜、凤尾放入锅中焯烫片刻捞出装入盘中

7.随即放入肉片,再炖几分钟,肉片熟后,将肉片盛起,将剁碎的干辣椒、花椒末撒上;

8.用剩余的植物油烧开,淋在肉片上,使热油把干辣椒、花椒粉、肉片再炸一下,即可使麻、辣、浓香四溢。

[酸菜鱼]

材料:大头鱼身一条,酸菜

调料:泡姜,泡辣椒,大蒜,生姜,干辣椒段,花椒粒,花椒粉(没有可不放),盐,料酒(或白酒),生粉,鸡蛋一只,味精,葱段

做法:

1、买大头鱼时可让摊主帮忙把鱼剖成三大片,回来洗净后,先把鱼骨切成段,然后把肚腹上的大排刺片下来.再把整块鱼肉皮朝下,从尾部开始片成薄片,这样全部片好备用,片好的鱼片加上料酒和盐先腌上

2、酸菜也片成片,泡姜,几颗大蒜,生姜切较大粒,另外多些大蒜剁碎,泡红椒剁碎

3、炒锅放油,下干辣椒段炒出香味捞起辣椒段备用

4、下花椒粒爆香后,倒入泡姜粒,生姜粒,大蒜粒炒香,再倒入酸菜翻炒几下,加适量清水煮上

5、趁煮酸菜汤时就把腌上的鱼再加入鸡蛋清,生粉拌匀

6、酸菜汤煮出味道后,可加适量盐调味,再把鱼骨和蛋黄放入(蛋黄煮出来好吃哦),煮至颜色变白,鱼肉用筷子一插就过,表明煮好了

7、把鱼骨和酸菜用漏勺捞起放在碗底

8、再把鱼片放入锅内煮好捞起放在鱼骨上,最后再调下汤的咸淡,加味精调味后倒入碗里

9、炒锅再加油烧热后,把泡红椒碎和大蒜碎炒香后铺在鱼肉面上,再撒上些花椒粉(也可不用),撒上葱段即可,美味的酸菜鱼就做好了。

[辣子鸡]

材料:

整鸡................1只约1000克

干红辣椒............80克

花椒................20克

姜..................一块

蒜..................6、7瓣

料酒................适量

盐,白糖............适量

白芝麻..............适量

做法: 1,整鸡处理干净后,去头去爪,剁成约2厘米的小块;蒜切片,干辣椒剪成小段

2、鸡块中倒入料酒和盐,拌匀后腌20分钟。盐要放够,成品的咸味全靠这时放的盐了

3、锅中油烧热,待烧得非常热时,倒入鸡块炸,炸至鸡块表面成焦黄,捞出

4、锅中留适量底油,放入蒜片爆香,下干辣椒段和花椒,炒出麻辣香味后,倒入炸好的鸡块和姜片

5、继续翻炒,再加入少许白糖,撒入白芝麻, 炒匀即可出锅

备注:

1、腌鸡块时,要一次性把盐放够,因为鸡块炸过后表面变干就无法再入味,必须提前放足量

2、炸鸡块的油要烧得足够热,使鸡块表皮迅速炸干变酥脆,这样炸出的鸡块外焦里嫩。油不够热的话,炸多久外皮都炸不焦,里面的肉也炸老了

3、辣椒花椒需要较多的量,吃起来才过瘾。吃完还剩下大量的材料,还可以继续做其他菜。

鱼香茄子的做法一

菜谱材料:

茄子500克,酱油15克,醋l0克,糖l0克,淀粉3克,料酒5克,葱5克,姜3克,蒜3克,豆瓣辣酱4克,油50克,味精l克。

菜的做法:

1.将茄子去皮、去蒂,切成小块,葱、姜、蒜均切成末;

原料:鸭血300克、熟鸡胸肉、熟猪心、熟猪肚各100克、火腿肠、水发香菇、黄豆芽各50克、葱、味精、香油、泡椒、干辣椒、高汤、牛油、鸡精、花椒、色拉油各适量

毛血旺的做法

1、将鸭血切成一字型的条,将鸡胸肉、猪心、猪肚、火腿肠、香菇切成片备用。

2、油锅烧热,将葱段、黄豆芽炒熟,放入味精,加少许香油,起锅装碗垫底用。

正宗四川口水鸡或夫妻肺片调料汁的做法

此调料汁可以用于所有麻辣凉拌菜,比如夫妻肺片,白斩鸡,白斩兔,凉拌三丝,正宗四川口水鸡或夫妻肺片调料汁的做法

或者麻辣凉粉,凉面什么的.四川麻辣凉拌菜的调料汁,最重要的部分就是熟油辣椒(油泼辣子)和红油,两者不同,做法分别如下:

熟油辣椒(油泼辣子):

选用粗颗粒的辣椒面,放入容器,表面撒上芝麻.将植物油烧热,扔入大量花椒粒,几颗八角和三奈,待烧辣后用勺子舀入放辣椒面和芝麻的容器中,要一边搅拌,仅仅以淹没辣椒为度,然后把锅里余油晾温,再一起倒入容器中,这种做法辣椒不会糊,颜色也好看。

红油做法(1):

取一锅,不妨大些,要有盖子。放植物油,边加热边把干红辣椒大量,掰开,放入。至油大热,辣椒微糊,撒入辣椒碎大量,花椒一把(四川汉源最好),迅速将锅 从火上移开。右手持锅盖,左手端50ML左右一小碗凉水。将水倒入油锅,盖紧锅盖。此时会有剧烈反应发生。待锅凉装瓶密封。

红油做法(2):

一般炸辣椒油都不红,此法可炸出红油,先把水与油和大量辣椒一起下锅,不放花椒,加盖慢火熬,不要揭盖,待吱吱啦啦响过,于无声处开锅盖,将辣椒炸酥即可。

加水可浸出辣椒的红色素,降低油温,使辣椒油味浓。

好了,有了上面两样东西,四川麻辣调料汁就算成功了一半了.接着开始作葱姜蒜汁.葱姜蒜汁:

葱姜蒜剁碎,放入碗内,加清水,水量以淹没再多一些为度,用擀面杖使劲捣烂成蓉(当然有绞碎机的省力了),汁水变成黄绿色,待用.最后就可以调调料汁了:

将生抽、葱姜蒜汁、料酒、熟油辣椒、白糖、醋、味精、红油、麻油于碗中对成汁淋在凉拌菜上,撒上芝麻、花生末、花椒粉、葱花即成。

口水鸡的做法

原料:三黄鸡 料酒 辣椒粉 葱 大蒜 姜 酱油 盐 糖 醋

做法: 1)鸡洗净,斩成块。在水即将烧开前,把葱姜料酒都加到锅里。水开后放入鸡煮10分钟。煮的时间不要太长,这样鸡肉比较嫩。

2)煮好的鸡要立刻放到凉水里,最好是冰水里激一下。这样皮质细腻紧滑,脆脆的不容易散烂。

3)葱姜蒜洗净,切碎。起锅,倒入油,待6成热时,放入葱姜蒜碎,爆炒出香味,关火,冲入辣椒粉中,沉淀后沥出的油就是红油了。(备注:如果没有过滤网,将葱姜蒜捞出后,再将油冲入辣椒粉中。)

4)将鸡肉从冰水中取出沥干,切成小块,放入盘中。

5)将酱油,盐,糖,醋混合两勺红油,搅拌均匀后,淋在鸡肉上面。根据你自己的口味,可以配一些香菜,香葱,芝麻。如果没有,不加也行!

川菜经典凉菜 口水鸡

材料:三黄鸡(或者乌皮土公鸡)1只、葱3段、姜片3片、料酒适量

调料:花椒油10克、白糖10克、芝麻酱10克、姜蒜汁30克、麻油30克、葱花10克、料酒30克、熟白芝麻20克、熟油辣椒50克、红酱油10克、熟花生末25克、醋10克、味精25克

做法:

1、将宰杀好的活鸡收拾干净(可以在超市买到收拾干净的整鸡,或者让市场工作人员帮忙收拾干净),去掉爪子和头、屁股。

2、将整鸡放入滚水中汆烫出血沫,捞出用水冲洗干净。

3、锅洗净,再次放入足够清水(没过鸡肉),放入葱段、姜片、料酒,水煮至70-80度(即将开)时放入鸡肉烫10-20分钟(视鸡的大小和质地而定),使鸡肉刚刚断生即可,中间要不断翻动,使各个部位受热均匀。

4、捞起鸡肉放入冰水中稍浸,捞出沥干。

5、将鸡肉斩块装入深盘中。

6、将调料按口味调好淋入装好盘的鸡块中,撒上芝麻、葱花和碎花生仁即可。

小贴士:

1、三黄鸡肉质较嫩,煮制时间不宜过长,乌皮土公鸡肉质较韧,煮制时间需要稍长。

2、姜蒜汁是姜末蒜泥加适量清水调制而成。

3、在将鸡斩块时,先将翅膀、鸡腿卸下,然后将鸡胸切长条,鸡腿、翅膀横切成块。

4、调料可以根据个人口味调整各样佐料的多少,但是香辣带甜是口水鸡的特点。

1、将牛肉、牛杂洗净。牛肉切成重约500克的大块,与牛杂一起放入锅内,加入清水(以淹过牛肉为度),用旺火烧沸,并不断撇去浮沫,见肉呈白红色,滗去汤水,牛肉、牛杂仍放锅内,倒入老卤水,放入香料包(将花椒、肉桂、八角用布包扎好)、白酒和精盐,再加清水400克左右,旺火烧沸约30分钟后,改用小火继续烧1.5小时,煮至牛肉、牛杂酥而不烂,捞出晾凉。

2、卤汁用旺火烧沸,约10分钟后,取碗一只,舀入卤水250克,加入味精、辣椒油、酱油、花椒面调成味汁。

3、将晾凉的牛肉、牛杂分别切成4厘米长、2厘米宽、0.2厘米厚的片,混合在一起,淋入卤汁拌匀,分盛若干盘,撒上油酥花生未和芝麻面即成。

[特点> 制作精细,色泽美观,质嫩味鲜,麻辣浓香,非常适口。

关键: 牛肉、牛杂必须反复洗净,去除异味。用于拌制牛肉和牛杂的卤汁要浓。

解密夫妻肺片的制作方法

夫妻肺片是川菜中最有名的凉菜,以牛肉为主料,配以肺、心、舌等制作而成,是四川人人皆知的美食。

如果说夫妻肺(废)片是最受广大食客欢迎的一道川菜,恐怕举手的人有不少。和其他几个流行川菜相比(如麻婆豆腐、宫保鸡丁、水煮肉、辣子鸡等),夫妻肺片明显是难度比较高的。虽然不敢说其他几味川菜没什么技术含量,起码能把这几个菜鼓捣得像模像样的大有人在。而夫妻肺片则不同,在国外即使在大城市最好的川菜馆里,恐怕也未必点得到让你满意的肺片……

(主料)牛肉、牛杂(肚、心、舌、头皮)

(辅料)红油、油酥花生,白卤水,复制酱油,芝麻,花椒面,盐,味精,白酒。八角8只,花椒5克,桂皮10克包纱布袋。(做法)牛肉牛杂加卤水、盐、白酒75克煮料至熟而不烂。晾凉,片成4厘米长,2.6厘米宽的薄片。加红油,卤水,复制酱油,盐,味精,芝麻花椒面,芹菜段拌匀。

这段文字据说是根据川菜大师陈松如的方子而来,夫妻肺片的做法基本上就是这样,差别不大。这方子虽然不错,可惜缺少了很多重要的细节,尤其是关于红油、味汁的调制。那么做好这道菜的关键到底在哪里?

[底料]

一、红油熬制

(原料)优质辣椒面、花椒(1大勺),丁香(4~6粒,这个味道强烈,不宜多放),桂皮(小指大小2~3块),小茴香(1小勺),白芝麻(1大勺),草果(1~2枚,用刀拍破),八角(又称大料,大茴,3~4颗),紫草(1大勺),辣椒面(1Cup),香叶(2~4片),生姜(1块),葱白(数段)。

(熬制)将植物油烧开后下入花椒、丁香、桂皮、小茴、草果、八角、香叶、紫草、辣椒面,搅拌匀,小火熬制30~40分钟,熬制期间时常搅拌一下,以防糊锅底。30~40分钟后加入白芝麻继续熬制30~40分钟。之后放置24~48小时。

二、制作复合酱油

(原料)优质酱油或生抽1Cup,老抽2大勺,白糖3大勺,红糖3大勺,其他调料与红油调料相仿(除辣椒面,紫草和芝麻外其他都要)。

(制法)将酱油等各种原料放在一只小锅中,中火烧开后转最小火熬制40~60分钟,晾凉后将调味料取出倒入一个干净的玻璃瓶中备用。

三、关于卤水

这里卤水指用来卤制牛肉牛杂的汤汁,不放酱油,所以是白卤水。

制作方法

1.将牛肉牛杂切大块洗净后飞水。锅中加水没过牛肉,加料酒,姜块,葱结,八角,花椒,桂皮,小茴等香料大火煮开后转中小火炖至牛肉牛杂熟而微烂(moreonthislater),捞出放晾,切薄片备用。

2.关键部分来了!取一只大碗或小锅,里面放1/2Cup卤汁或高汤,加鸡精、精盐各1/2小勺(如果是用现烧的简易高汤替代品就不用再加鸡精和盐了),复制酱油3大勺,花椒面1/2小勺,红油1/2Cup,麻油(香油)1大勺,花椒油1大勺搅拌匀后加入切好的牛肉牛杂250克,拌匀,装盘(最好用深盘或碗),撒上油酥花生碎(去皮花生米油炸/炒酥黄后用刀压碎或blender打碎)、炒熟的白芝麻、香葱碎、芹菜末(用中国芹菜)和香菜末就可上桌了。

解密一:红油不是油泼辣子

根据笔者的仔细研究和反复尝试,总结这道菜的调味关键有三个环节:红油,复合酱油和卤汁的使用。

先说红油。这个问题看到很多朋友讨论过,有人认为这红油的制作是不需要除辣椒外的任何调料的,亦无须长时间熬制。我认为这是把红油和油泼辣子混淆了。个人认为这个红油是做好很多麻辣川味凉菜的首要关键,比如夫妻肺片和蒜泥白肉,这红油应含有多种香料的复合香气,浓郁而具有回味,而简单的油泼辣子是无法满足这种要求的。这里顺便说一句,本人其实是油泼辣子的忠实拥护者,一直认为简单的油泼辣子(当然需要辣子新鲜优质)是真正的百吃不厌。只不过对于夫妻肺片来讲,油泼辣子并不合适。

除气味以外,红油的另一个关键就在这个“红”字上,鲜红发亮的红油给人以感官的刺激,让人食欲大增。要是你调出的“红”油黄不黄白不白,那么拌出的肺片味道再好也要大打折扣了。

解密二:复合酱油并不一般

再谈复合酱油。所谓复合酱油就是用多种香料调料与酱油混合熬制而成的再加工酱油,这个不是能直接从商店里买来的,需要你自己动手。酱油要尽量选用高质并且咸度较低的。因为经过较长时间熬制后的复制酱油比较浓稠,如果原料酱油本身过咸就不大合适了。复合酱油是这个夫妻肺片调味的另一关键,如果只用简单的酱油包括老抽生抽,这肺片任你大力咀嚼回味,恐怕也是难以悠长的。除调味外,复合酱油还起到附加的调色作用。

解密三:浸的并不都是油

那么那红彤彤油亮亮的真的都是红油吗?

当然不是。这个不用说大家也知道——菜谱上不是明明白白写着“加白卤水”吗?真正的问题是:这个卤水到底要加多少呢?这个恐怕心里有谱的就不多了。

经过反复试验,这卤水和红油的用量比例可以控制在大约1:1左右(当然这个比例是建立在一定的红油绝对用量上的),希望这个消息能减轻各位拌肺片时一半的心痛。不过,虽然掺了一半水,你看到的那半盘子红油倒差不多实实在在的全是红油,因为大部分的卤水都吸附在牛肉牛杂上了。较高量的使用卤水有两个好处:1.使肺片充分入味;2.避免了肺片因吸附了太多的红油而过于油腻。
